Here is a great recipe for homemade waffles. I have been making these for years and my kids love them. I always double the recipe, cut the waffles in 4 pieces and transfer them in an air tight container that goes in the freezer. This way, whenever my kids want to eat them, they simply take how many pieces they want and put them in the toaster and add whatever fruit as a topping. They are sooooo delicious and crispy ...

Ingredients: 
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1tbsp baking powder
  • 1 tsp salt
  • 3 eggs room temperature
  • 2 tbsp granulated sugar
  • 1 1/2 cups of milk
  • 1 tsp vanilla extract
  • 1/2 cup (1stick)unsalted melted butter
  • Fresh fruits
Instructions:
In a large bowl, combine all the dry ingredients together, sift and set aside. (flour, cornstarch, baking powder and salt)
In another bowl, whisk the eggs and sugar together until the eggs become pale yellow. 
Then, add milk, vanilla extract and whisk until the sugar dissolves completely.
Incorporate 1/2 of the dry ingredients into the liquid and fold your mixture with a spatula. Once your flour is well mixed, repeat with the other half until everything is nice and smooth. (there shouldn't be any lumps.)
Pour melted butter into your batter and fold your mixture until well combined.
Pour batter into your waffle maker and bake until golden brown according to your machine.
Once baked, transfer it to a plate. Top your waffle with fresh fruits and drizzle with maple syrup.
