 Giant cookie ice cream sandwich recipe
Hi guys,
hope everyone had a great week. ;) Ready for another recipe, here is a fun one and it is very very easy to make. A giant cookie ice cream sandwich. Why not? Something different. This recipe is perfect for those who don't like cake. Hope you enjoy it!

Ingredients
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
1 1/2 tsp vanilla extract
1 egg, room temperature
1 1/2 all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup Hershey's kisses chocolate (keep a few aside for the top cookie)
1 1/2 quarts of ice cream, softened (any flavour of your choice)

Step 1
Preheat oven at 350' F 
Step 2
Using your electric mixer, beat the butter and sugars until light and fluffy on medium speed. 
Step 3

Add your egg and vanilla. Mix until well combined.
 Step 4
 Sift both flour and baking soda together. Then, add salt and mix until well combined. Gradually add your flour mixture and mix on low until well combined.
Step 5

Add you chocolates and mix them with a spatula. Make sure to reserve a few chocolates, to place on top.
 Step 6
 
Divide your cookie dough into two equal parts. Place each dough into two 8 inches cake pans lined with parchment paper. Press dough evenly and leave about 1 inch space around.
Step 7
 
Place remaining chocolates on top of 1 cookie. (this will be the top cookie)
Step 8
Bake for 20-25 minutes until cookies are slightly golden. Let them cool for about 5 minutes in the pans and then, transfert them onto a cooling rack. Once your cookies are completely cooled, place them into an airtight container.

 Step 9
 
Using your electric mixer, beat the ice cream just so it softens and becomes easy to manage. (you don't want it to be liquidly, you want it creamy.)
Step 10

Using the same size cake pan that you used for the cookies, line the inside with plastic wrap of 1 cake pan. (make sure that it overlaps)
Step 11
Fill up the pan with the softened ice cream. Chill for 6 hours or over night. 
Step 12
Place the cookie that has no extra chocolate on top of the ice cream. (make sure that the flat part of your cookie is sitting on top of your ice cream.) Place your plate over your cookie and carefully invert the ice cream into your cake plate.
 Step 13
Gently remove the cake pan and pull away the plastic wrap.
Step 13 
Dip a large icing spatula into warm water and go around your ice cream to smooth everything. Place your other cookie on top and enjoy.
