Hi guys,
in this weeks recipe, I will show you how to make croissants from scratch. I can sense many of you shaking your heads and saying oh no to the no! But, if you follow my steps, you will see that you don't need to be a baker to make fresh croissants. This recipe is so versatile, you can add almonds or pistachios or cheese or simply have them plain. Hope you try and enjoy them as much as we do.

Ingredients:
300 ml warm milk
1/4 cup granulated sugar
1 package of active dry yeast
2¾ cups all-purpose flour
1 tsp salt
1¼ unsalted butter (room temperature)
Egg wash
1 egg
1 tbsp. water or milk
 Step 1  
 
Heat the milk in the microwave.(don't make it to hot or else the yeast wont activate). Add 1 tbsp. of sugar to your milk and the yeast package. Mix until well combined. Set aside until it activates. You will notice that it will start to get foamy and brown.
Step 2
Once the yeast is foamy add the rest of your sugar and mix until well combined
Step 3
Transfer your mixture to an electric mixer with a dough attachment and add your flour and salt gradually. If you don't have such machine, no worries simply add your flour gradually into your liquid and mix by hand with a wooden spoon.
Step 4
Continu mixing until it becomes a ball of dough and can not be mixed with the machine or by hand anymore.
 Step 5 
Transfer your dough to your counter sprinkled with flour and knead it until it is nice and smooth (about 6-8 minutes)
 Step 6
Spray a large bowl with vegetable oil and roll your ball dough in the oil. Cover the bowl with plastic wrap and set aside until the dough doubles in size for about 1 hour.
Step 7
Meanwhile, transfert your butter to a parchemin paper. Place a second sheet of parchemin paper on top of your butter. 
Step 8
Using a rolling pin, flatten out your butter creating a rectangular. Chill in the fridge for at least 20 minutes.
Step 9
Cover your working area with a little bit of flour and roll your dough into a rectangular shape.
Step 10
Place your chilled butter on top of your dough.
Step 11
Fold the sides covering the butter.
Step 12

Once covered, roll out your dough into a rectangular. Using a triangular template, cut out numerous pieces with a pizza cutter. 
Step 13
With your hands, roll your dough starting from the larger side towards the pointy part.
Step 14 
Transfer them onto a cookie sheet lined with parchment paper. Cover them again with plastic wrap and let them rise for at least 15 minutes.
Step 15
Egg wash

In a small bowl mix together both egg and water until it because a light yellow.
Step 16
Brush egg wash on each croissants. Bake at 400' F for 15-20 minutes until they are nice and golden. Then transfer them onto a cooling rack.
