Pumpkin spice chocolate chips cookies recipe

 
The pumpkin pie spice gives these cookies so much flavour that it brings them to another level. These cookies have such a sophisticated taste and are soft on the inside. They are perfect for fall season! You can have them with milk, tea or even coffee. Everyone will love them!

Ingredients
2 1/2 cups all purpose flour
2 tsp cornstarch
1/2 tsp cream of tartar
3/4 tsp baking powder
1/4 tsp salt
2 tsp pumpkin spice
3/4 cup unsalted butter softened (not melted)
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
1 egg
1/2 cup pumpkin puree canned ( not pumpkin pie filling)
1/2 cup chocolate chips
 
Cinnamon sugar coating
1/4 cup granulated sugar
1 1/2 tsp cinnamon
 
Pumpkin pie spice:
3 tbsp ground cinnamon

2 tsp ground ginger
1 tsp ground nutmeg
1 tsp ground allspice
1/2 tsp ground cloves
 
Step 1
Sift together the flour, cornstarch, cream of tartar, baking soda, salt and pumpkin spice. (if you can't find pumpkin pie spice you can make it yourself, see recipe below) Mix well and set a side.
Step 2
Pumpkin pie spice mix

In a small bowl mix together, ground cinnamon, ginger, nutmeg, allspice and cloves and you have yourself pumpkin pie spice. 
Step 3
Using an electric mixer, beat together butter and both sugars until fluffy on medium speed. 
 Step 4
Add the egg, vanilla extract and pumpkin puree.  
Step 5
Gradually add the flour mixture you will notice that the dough will become sticky.
 Step 6
Add the chocolate chips and mix.
Step 7
Cover the bowl with plastic wrap and refrigerate for 2 hours.
Step 8
Preheat the oven to 350F degrees and line a cookie tray with parchment paper.
Step 9
Form your dough into even balls.
Step 10
Mix together sugar and cinnamon in a small bowl. Roll your balls in the cinnamon sugar making sure to cover them. Place them on your cookie sheet and flatten them slightly. Bake them for about 8-10 minutes until they are slightly brown.
Step 11
 Transfert your cookies onto a cooling rack.
