Baked vanilla bean doughnut recipe


One of my favorite desserts are doughnuts butttttt they are not really good for your health because they are usually fried. Here is a great recipe for baked doughnuts which makes me less guilty after eating one.
They have the texture of a light cake with a burst of vanilla bean flavor.

Ingredients:
Baked cake doughnuts:
2 eggs
3/4 cup granulated sugar
2 tbsp unsalted butter, melted
2 cups cake flour
2 tsp baking powder
3/4 tsp salt
3/4 cup buttermilk
1 vanilla bean
1 tsp vanilla extract
Chocolate (for drizzle)
 
Vanilla glaze:
1 1/2 cup of powder sugar
2 tbsp milk
1/2 tsp vanilla vanilla extract
3 tbsp melted butter
food colouring
 
Step 1
Preheat oven at 425' F
Step 2
Using an electric mixer, beat the butter and the sugar together on medium speed. Add one egg at the time. Beat until just combined. (don't over beat)
Step 2 
Sift flour, baking flour and salt, set aside.
Step 3 
Scar your vanilla bean right in the middle using a knife. Open it up and scrape the vanilla beans.
Step 5
In a bowl mix buttermilk, vanilla bean and vanilla extract.
Step 6
Add half of your flour to your egg mixture and half of your buttermilk, mixt until just combined. Add the other half and mix again.
Step 7 
Your mixture should be looking like this.
Step 7 
Spray your Doughnut pan with vegetable cooking spray. Fill each pan cavity.
Step 8 
Vanilla glaze
In a medium bowl, stir together sugar, milk, vanilla and melted butter until sugar is completely dissolved. Add your food colouring of your choice.
Step 9 
Bake 7-9 minutes depending of your stove. (the top has to be bouncy)
Step 10
Dip your doughnut in your glaze. Let it set and then drizzle with chocolate.
